I don't know how desktop apps managed to handle video and audio before the Web came along.

By definition (ref above), those are non-traditional desktop applications. Traditional desktop applications were run on green-screen terminals connected to powerful IBM 80286 workgroup servers.

No one would ever run a traditional desktop application on a Mac or an Amiga. Certainly no one did so using Amiga 1000s a year before Adobe got into the traditional desktop application business.
